Ensure your ingredients like eggs, butter, and sour cream are at room temperature for a smoother batter and even baking. Overmixing the batter can lead to a dense cake, so mix just until the ingredients are combined. You can use a kitchen scale to divide the batter evenly between the pans for uniform cake layers. You may need to press and scrape the filling against the sides of the sieve to push it through, but it will remove the seeds for you and you can discard them.
