What’s the Best Cut of Beef for Steak Bites

I love Ribeye, New York strip, sirloin, tenderloin, or flank steak for making into steak bites. They cook up tender and juicy in a flash.

Recipe Notes and Tips

I cut the steak bites into equal sized bites. This ensures they cook evenly. Don’t skip the marinade, it imparts tons of flavor and helps tenderize the meat. The skillet must be hot. Be patient to let it heat up properly. This ensures a nice crust. Cast iron is by far the best type of skillet to use. If you don’t have one, try non-stick. I cook in batches if necessary. If you overcrowd the skillet the steak bites will steam instead of searing. Be careful not to overcook the steak bites. A minute or two per side is all they need.

Ingredients Needed

Steak – I cut it into bite sized cubes. Marinade – Soy sauce, olive oil, Worcestershire sauce, balsamic vinegar, garlic, red chili flakes, salt and pepper. Potatoes – Baby Yukon gold. For sautéing – Olive oil, butter, garlic, fresh thyme, dried oregano, salt and pepper. Garnishes – Fresh parsley and grated parmesan cheese.

Steak Bites with Potatoes Recipes

Marinate the steak: I start by combining the steak bites with the marinade ingredients in a bowl. I make sure to coat them well with the marinade. Then, I cover the bowl with cling wrap and pop it in the refrigerator to marinate for 2 hours. About 30 minutes before I’m ready to cook, I take the bowl out of the refrigerator to let the steak come to room temperature. This ensures that it cooks evenly when I’m ready to cook it up. Cook the potatoes: I heat up 1 tablespoon of oil and 1 tablespoon of butter in my trusty cast iron skillet over medium-high heat. Once it’s nice and hot, I add in the potatoes along with some salt and pepper. I cook them for about 15-18 minutes, stirring frequently, until they turn a beautiful golden color and become tender. Once they’re done, I plate them out. Cook the steak bites: In the same pan, I melt 2 tablespoons of butter. Then, I add in some thyme, oregano, and garlic, stirring them for about 15 seconds. Next, I add the marinated steak bites into the pan. I cook them for about 1-2 minutes per side, aiming for a medium-rare doneness. This ensures that the steak bites are juicy, tender, and perfectly cooked, just the way I like them. Finish the skillet: I add the potatoes back into the skillet with the steak bites, cooking them together for about 1 minute until they’re heated through and nicely combined with the flavors from the steak. Then, I give it a taste and adjust the seasoning with a bit more salt and pepper if needed, ensuring everything is perfectly seasoned. To finish, I garnish the dish with some chopped parsley for freshness and parmesan shavings for a deliciously savory touch. Now it’s ready to serve and enjoy!
