Ingredient Notes
Frozen Dumplings or Wontons: These are the main component of the dish. You can choose any variety based on your preference. Scallions: Used both in the chili oil and as a garnish. Garlic: Finely chopped, it infuses the oil with a deep, aromatic flavor. Sesame Seeds: Used both in the oil and as a garnish. Red Chili Flakes: The primary source of heat. You can adjust the amount based on how spicy you want the dish. Korean gochugaru is a great choice for a unique, smoky flavor. Oil: This is used to create the chili oil. A neutral oil is best to let the flavors of the other ingredients shine. Soy Sauce: Adds a savory, umami depth to the chili oil. Rice Vinegar or White Vinegar: Brings a touch of acidity to balance the flavors.
Spicy Dumplings / Spicy Wontons
- Prepare the Chili Oil Mixture: Place chopped scallions, garlic, sesame seeds, and red chili flakes in a heatproof bowl. Heat the oil in a small frying pan over medium heat until it’s hot. Carefully pour the hot oil over the scallion, garlic, and spice mixture in the bowl. It should sizzle upon contact. Stir in the soy sauce and vinegar into this mixture. Mix well and set aside.
- Cook the Dumplings: Bring a large pot of water to a boil. Add the frozen dumplings or wontons and cook according to the package instructions. Once cooked, drain them in a colander. Optionally, reserve about 1 cup of the boiling water if you prefer a soupier version or are using more dumplings.
- Combine and Serve: Gently add the cooked dumplings or wontons to the chili oil mixture. Toss them carefully to ensure they are evenly coated. Garnish with additional sesame seeds and chopped scallions. Serve immediately while hot and enjoy!
Alpana’s Tips
Dumpling Selection: Choose high-quality frozen dumplings or wontons for the best results. The flavor and texture of the dumplings can vary by brand. Oil Temperature: Make sure the oil is hot enough before pouring it over the scallion and spice mixture. The heat helps release the flavors from the garlic, scallions, and chili. Spice Adjustments: If you’re sensitive to spice, start with less chili flakes and gradually add more to suit your taste. If you love heat, feel free to be generous with the chili flakes. Garnish: Don’t skip the garnish! Extra sesame seeds and scallions not only make the dish look more appealing but also add a nice textural contrast. Leftovers and Reheating: If you have leftovers, store them in the refrigerator and reheat them gently in the microwave. The chili oil may solidify in the fridge, but it will return to its liquid state upon reheating.
