Ingredients You’ll Need

Baby Potatoes – You can use any color you prefer, or get the multi-colored ones for a more festive platter. Olive oil – We generally use light olive oil, but if serving a meal with a heavy Mediterranean theme will go with extra virgin. Fresh herbs – Thyme, rosemary and parsley. If you don’t have fresh, use ⅓ as much dried. Other seasonings – Garlic powder, crushed red pepper, salt and pepper.

How to Roast Baby Potatoes

  1. Prep the potatoes: Slice the potatoes in half and toss them with olive oil and seasonings. Place skin side down in a single layer on a lightly greased baking sheet.
  2. Roast: Roast potatoes in an oven preheated to 425°F for 30 minutes. Flip them over, then return to the oven and bake for an additional 3-5 minutes.

Serving Suggestions

These potatoes are so versatile, they go with just about anything. Some suggestions… Chicken Dishes: Coca-Cola Chicken, Harissa Chicken, Baked BBQ Chicken or Peri Peri Chicken. Red Meat: Country Style Beef Ribs, Braised Pork Steaks, Chuck Roast, Lamb Kleftiko or Steak Bites. Seafood: Mediterranean Baked Fish, Sockeye Salmon, Fish en Papillote or Salmon Patties. Meatless: Greek Green Bean Stew, Spanish Pisto or Stuffed Portobello Mushrooms. And don’t forget breakfast! These potatoes go great with omelets or just about any other savory breakfast dish.

Variations

Make them Cheesy: Sprinkle grated Parmesan or your favorite cheese over the potatoes in the last 5 minutes of roasting. Spicy Twist: If you like a bit more heat, increase the amount of crushed red pepper, or add diced jalapeños or a dash of cayenne pepper to the seasoning mix. Lemon Herb Fusion: Add grated lemon zest and a squeeze of fresh lemon juice before serving. Bacon & Chive: Mix in crispy bacon bits and chopped chives before serving.

Storing and Reheating Leftovers

Leftover baby potatoes can be refrigerated in an airtight container or zip top bag for 4-5 days. Reheat in the oven at 300 degrees, or in an air fryer to crisp them back up.
