Requiring just about 10 minutes of hands on time, we make them whenever we have leftover pulled pork! With the Super Bowl just around the corner, everyone is planning that perfect addition to the party spread. We’ve got plenty to choose from, including Spicy Korean Wings, great dips like Moutabal, and fun skewers like Chicken Souvlaki. But let’s be honest, it’s really hard to beat a big pile of cheesy loaded nachos.
Why You’ll Love It
Easy and Quick: With minimal prep and a cooking time of around 10 minutes, these nachos are your go-to for a quick, hassle-free meal. Great Use of Leftovers: Typically, pulled pork is made in large quantities (we usually cook a 4-5 pound Boston butt). Customizable: This recipe is wonderfully versatile. You can adjust the toppings based on what you love or what you have on hand. Perfect for Sharing… Or Not: Pulled Pork Nachos are the ultimate party food, ideal for gatherings, game days, or movie nights. However, they’re also perfect for a solo indulgence when you’re in the mood for something easy and satisfying.
What Kind of Pulled Pork to Use
You can really customize the flavors of your nachos by using different types of pulled pork. Today we are using Carnitas, the classic Mexican pulled pork. Another great Mexican-themed option is Barbacoa Pork, which is more boldly flavored thanks to the addition of smoky chipotle chilis. If you’re a big fan of both garlic and citrus flavors, go with Cuban Mojo Pork. For something super simple, and prefer to let the other toppings take some of the spotlight, Hawaiian Kalua Pork is a great choice. Or for a big time flavor bomb, it’s hard to beat Pernil. Unlike the above pulled pork recipes, it cooks in the oven rather than a slow cooker. Whichever variety you choose, you’re in for a fun and delicious dish.
What You’ll Need
Pulled Pork: Naturally you’ll want this made ahead of time. If you don’t feel like cooking it yourself, you can buy it in bulk at many restaurants, or even some supermarket deli counters. Tortilla Chips: Look for a bag where they’re not too broken up (which can be a challenge). Corn: Either canned or frozen (thawed). Cheese: We love sharp cheddar here, but go with whatever variety you prefer. Other Toppings: Today we are using tomato, onion, avocado, cilantro and jalapeno. These go on after the nachos are baked.
How to Make Pulled Pork Nachos
- Layer: On a greased baking sheet, layer first tortilla chips, then pork, then corn, then cheese.
- Bake: Bake the nachos for 10-12 minutes in an oven preheated to 400°F.
- Finishing Touches: Add on all the rest of the toppings.
Additional Topping Ideas
These nachos are very customizable depending on your preferences or what you have handy. Just take note that some ingredients should be added prior to baking, while others are best added after. Here are some ideas: Toppings to be added before baking: Black beans, pinto beans, diced bell peppers, or pickled jalapenos. Toppings to be added after baking: Sour cream, sliced black olives, queso blanco, guacamole, or Pico de Gallo.
Helpful Tips
Use Quality Tortilla Chips: Choose thick and sturdy tortilla chips that can hold up the weight of the toppings without becoming soggy. Balance Your Toppings: While it’s tempting to load up on all the toppings, achieving a balance is key. Too many toppings can overwhelm the chips and make them soggy, while too few can make the nachos seem sparse. Cheese Matters: Choose a good melting cheese like cheddar or a blend of Monterey Jack and cheddar for that perfect cheese pull. And please grate it freshly. The pre-shredded kind contains additives that prevent it from melting nicely. Oven Watch: Keep an eye on your nachos while they’re in the oven to prevent the edges from burning. Every oven is different, so adjustments might be necessary to ensure the cheese is perfectly melted and the chips are just the right amount of golden.
