We love having popsicles on hand to change up how we eat produce, and I often use them as a way to prevent food waste. Sliced peaches: You can use fresh peaches or thawed-from-frozen peaches. You can also make these with canned peaches if that’s an easier option for you; simply drain off the liquid from the fruit before you start. Apple juice: Depending on the juiciness of the fruit, it’s usually easiest to blend them by adding a little liquid. I like to use apple juice since it has a neutral flavor that lets the fresh peach flavor shine through. You can also make them slightly creamy by using full-fat coconut milk, solids only, or plain whole-milk Greek yogurt. Honey (or maple syrup; optional): The sweetness of peaches can vary a lot, so taste the blended mixture and add a little sweetener as needed.

Once fully frozen, keep peach popsicles in the freezer for up to 6 months. If you freeze in popsicle molds without a plastic cover, you can transfer to a freezer bag once fully frozen to keep them fresher.

Use fresh or thawed frozen fruit in these peach popsicles. Or, to use canned peaches; drain off the liquid and proceed with the recipe. Taste the blended fruit and adjust sweetness with honey or maple syrup as needed. Use apple juice, coconut milk (the full-fat kind in a can, solid part only) or Greek yogurt to vary the flavor. The coconut milk or yogurt will make these a little creamy. Use ice-pop sleeves or popsicle molds. Let peach popsicles sit at room temperature for 5-10 minutes to soften slightly or run the popsicle mold under hot water before serving, if desired.
