Pea Ricotta Stuffed Shells With Red Wine Marinara

Last week I roasted and filled red bell peppers and was reminded how fun and easy and it is to make stuffed foods. It inspired me to make these pea ricotta stuffed shells with a red wine marinara not even a week later! Like lasagna or other noodle-based casseroles, the shells are great hot out of the oven as well as for leftovers. I moved this week, well specifically yesterday and today, and I wish I had some of these shells stored in the fridge for an easy lunch or dinner....

Quick Pizza Quesadillas An Easy Kids Meal

Pizza Quesadillas I try to keep a minimum of pantry staples on hand so I always have a few meals I can make, even when we’re low on time. And these easy quesadillas are one of the favorites. Recipe For Watergate Salad

Watergate Salad, Pistachio Fluff, and Pistachio Dessert Salad are all names referring to this yummy, sweet salad that is straight out of the 1970’s when it was first introduced by Kraft under the name “Pistachio Pineapple Delight” as a way of promoting their new pistachio instant pudding mix. This super fun dish is simple enough to have on busy weeknights for dessert after family dinners, but it can also be well presented on a dessert table for special occasions too....

Salvadoran Curtido Fermented Cabbage Relish

Curtido is a Salvadoran condiment made of cabbage, onion, carrot, pepper, and oregano. It’s lightly fermented, salty, a bit tangy, and perfect for liberally topping tacos, bowls, and pupusas (a traditional Salvadoran stuffed masa pancake). It’s easily made at home, and can be adapted to your tastes–mild or spicy, more or less sour. The cabbage is lacto-fermented, which means that we take advantage of the naturally occurring good bacteria that’s present on the surface of all fruits and vegetables....

The Ultimate Homemade Sandwich Rolls

I’m going to say something that’s possibly a bit controversial: sandwiches are only as good as their bread. You can have the most delicious filling but if the bread sucks, the sandwich will always fall short of good. And you can’t beat freshly baked bread. The crust is more tender, the insides perfectly soft but sturdy enough to hold up to the filling. And if you’re looking for the perfect flavorful white sandwich rolls, then this is your recipe!...

Twice Baked Potatoes

I grew up eating lots and lots of potatoes. My mom is from Idaho which is famous for it’s amazing potatoes. My grandma grew up in Blackfoot, Idaho, which has the distinction of calling itself the “World Potato Capital” and is home to the Idaho Potato Museum. Every summer when we visited, my grandparents would send us home with big boxes of Idaho potatoes, which were vastly superior to the sad little green things we usually found in the grocery stores back in those days....

These vegan chicken-style cutlets are made with a chickpea seitan, which combines the lovely chickpea with wheat gluten for a tender yet chewy and almost flakey cutlet. You can slice it, tear it, or mince it for a variety of preparations, or of course leave it whole! What is seitan? Seitan has been made around for centuries, likely first made in East Asia by buddhist monks. It’s a completely vegan protein made of wheat gluten, which is the protein in wheat....
