These yummy Mickey Rice Krispie Treats are so easy to make and ready in just 35 minutes. With a touch of Disney magic, these treats will transport you straight to Main Street in the Magic Kingdom! We love going to the Disney parks and one of the things I always look forward to most are the yummy snacks and treats that you can get all over the park. I need to make a trip one of these days just to try all the food! The jumbo Mickey Mouse rice krispie treats covered in chocolate and mini M&M’s are one of my very favorite things, even though they are so simple to make at home. It’s such a satisfying combination of gooey marshmallows, crispy rice cereal, melted chocolate and milk chocolate M&M’s! This easy recipe for an at-home version uses simple ingredients you may already have in your pantry when you can’t make it to the parks but need a little Disney-fix to brighten someone’s day! I adapted my Salted Brown Butter Rice Krispie Treats a bit by scaling back the marshmallows, cereal, and butter (the Disneyland rice krispies treats aren’t quite as gooey as my homemade rice krispies treats normally are) and omitting the coarse kosher salt. These are also perfect for holidays, birthdays, or any Disney-themed occasion and it’s a great way to involve the kids in the kitchen as well or make as edible gifts for the holidays. You can use a lollipop stick or cookie stick instead of popsicle sticks if you prefer. Be sure to generously butter the Mickey Mouse-shaped cookie cutter or coat it with cooking spray. This is the best way to ensure the mixture doesn’t stick to it and you get a smooth cut around the edges. Experiment with different drizzles, like caramel or flavored candy melts, for a different flavor. Give a magical treat as a party favor or even an edible gift! Simply package them in cellophane bags and tie the top with a bow or ribbon! When melting the marshmallows and butter, use a low heat setting to avoid burning. Melting it slowly will result in a smoother, creamier texture. Give your treats the proper time to set to ensure that they maintain their shape and the chocolate sets.
Substitutions and Variations
If you have unsalted butter, just add a pinch of salt to help enhance the flavors. Milk chocolate or white chocolate can be used instead of semi-sweet chocolate chips in the cereal mixture if you prefer. Use other small candies or sprinkles instead of Mini M&Ms, like Mini Reese’s Pieces, butterscotch chips, peanut butter chips, white candy melts, or even vanilla chips!
