They’re a light and tasty dinner that comes together in under 30 minutes. We sure do love our tacos, be it classic street style Chicken Tacos, trendy Birria Tacos, or unique flavors like Bulgogi Tacos or Big Mac Tacos. Today’s recipe is something we threw together on a whim when we wanted something lighter and healthier after all that holiday binging. The result was so good we decided it belonged here on GypsyPlate.

Ground Chicken: A lean protein choice that absorbs the flavors of the herbs and spices beautifully. You can also make the same recipe with any other ground meat. Herbs: Oregano, thyme, and parsley. Use fresh if you have it on hand. Garlic: Freshly minced. Crushed Red Pepper: For just a hint of heat. Omit if you prefer. Vegetables: Zucchini and red bell pepper in the chicken mixture. Onion, tomato, and cucumber for garnish. Kalamata Olives: A Mediterranean staple. You can use regular black olives if that’s what you have. Tortillas: We are using corn, but feel free to use flour. Feta Cheese: The final touch.

How to Make Mediterranean Tacos

  1. Prep: Dice up the veggies and crumble the feta.
  2. Make the meat mixture: Cook the chicken with a little olive oil in a skillet until cooked through. Stir in the veggies and seasonings, then cook until the veggies are soft.
  3. Assemble tacos: Quickly warm the tortillas in a skillet or in the microwave. Divide the chicken mixture among the tortillas. Garnish with diced tomato, onion, cucumber, and crumbled feta. Enjoy!

If you want a little more elaborate spread, let’s go with the classic taco sides of rice and beans, but with a Mediterranean twist. Helpful Tips

Choose the Right Chicken: Please go with regular ground chicken rather than ground chicken breast, which is better suited for soups and sauces. Otherwise your meat mixture will be too dry. Chop Vegetables Uniformly: Make sure that your zucchini and bell pepper are diced to similar sizes. This not only makes the tacos easier to eat but also ensures even cooking. Balance the Spice: Adjust the amount of crushed red pepper to suit your taste. If you’re serving guests with varying spice preferences, you could offer red pepper flakes on the side. Leftovers and Storage

This ground chicken mixture also freezes beautifully! Go ahead and make a giant batch, as it’s a great meal prep option. Cool the taco meat completely, then store it in a freezer friendly bag. Press flat to gently squeeze out the air from the bag before sealing. To thaw, defrost the meat in the fridge overnight.
