It’s basically the same as your average cabbage slaw, but with a healthy addition of kimchi! Which is, as you may know, Korean fermented cabbage. All you need for kimchi slaw is: your favorite kimchi, cabbage (red or green), vegan mayonnaise (cause hey, I’m vegan), and rice wine vinegar. And making the slaw is as easy as mixing it all together in a bowl! So there you have it! Your very own kimchi slaw, which is certainly one of the most tasty slaws out there! Recipes to enjoy it with: my vegan Korean BBQ burgers, my gochujang bean burgers, anything you have with Korean BBQ sauce, and like any cookout style meal where you’re feeling something a bit different! Kimchi is so flavorful that your slaw doesn’t need much to be amazing! A note about kimchi if you’re vegan or vegetarian: it often has fish sauce or shrimp paste in it rendering it not vegan, however not all kimchi does. So read ingredients and check labels before buying!

Make it your own!

You can always change the ratio of fresh cabbage and kimchi. I use a 1:1 ratio in my kimchi slaw, but you can always use more or less kimchi to your own liking. You can add more rice vinegar if you want more of a sour tang to your kimchi. Feel free to give it a kick with some gochugaru (Korean red pepper flakes) or crushed red pepper.
