This Healthy Sweet Potato Pudding is creamy and comforting, and is naturally sweet from the mashed roasted sweet potato. It reminds me of pie filling, but is also a great source of protein, calcium, and vitamin A. TIP: This sweet potato yogurt works for dessert, of course, but it’s also a great snack or breakfast! You can even top it with crushed up granola.

I like to use vanilla Greek yogurt from Siggis, which has great flavor but not a ton of added sugar, but you can use any brand you like as well. If you’d rather use plain Greek yogurt, that’s fine too—just sweeten to taste with a little maple syrup. TIP: You can top it with a little sprinkle of pumpkin pie spice or cinnamon.

Can I make this dairy-free?

You can swap in your favorite non-dairy yogurt, though a thicker Greek-style one will work better for the consistency.
