We eat a lot of pizza in our house and since we don’t have great takeout options in our little town (hard to believe, but it’s true!) I am in the habit of making it from scratch. But I don’t always have the time or energy to make regular whole wheat pizza dough, which is where Flatbread Pizza comes in. By using a flatbread as the crust, you get the texture of real pizza crust but without the work. And it cooks up so fast since the crust is already precooked. Flatbread: Look for this in the bakery aisle of your store or near naan and tortillas. Pizza sauce: You can use any brand that you prefer here. Shredded mozzarella cheese: This gives the flatbread pizza the classic flavor and cheesy texture you want in a pizza. Grated Parmesan, optional

Best Tips for Success

I like to use flatbread from the bakery aisle in our grocery store, but any will work. They come in a variety of sizes so you may need to adjust the amounts of the sauce and cheese. (The ones I used were about 10 inches.) Add fully cooked ground meat or sausage or partially cooked bell pepper or broccoli. Or add pepperoni, thinly sliced mushrooms, olives, or spinach directly on top of the sauce and cook as directed. Make it Mexican by using half pizza sauce and half salsa, add some refried beans and use cheddar cheese. Then you can top with any taco toppings you like. Serve the Flatbread Pizza with a simple side of fruit for an easy meal. Dairy-free: Use a favorite dairy-free cheese.
