What is Carne Asada?

Literally translating to “grilled steak”, carne asada is a typical steak preparation in Mexico and Central America. It is frequently used as a filling for tacos and burritos. The most important part of making a good carne asada is the marinade. It not only adds great flavor to the meat, but it also tenderizes it. Carne asada marinades, as with most traditional recipes, vary from region to region and family to family. Typically, though, lime juice and salt are key ingredients. Here is what we used today…

Carne Asada Marinade ingredients

Citrus juice – Orange and lime.Olive oil – It helps keep the meat moist.Garlic – A star here.Jalapeño – For just a little kick.Vinegar – A little extra acidity to help tenderize the meat.Cilantro – A good bit.Spices – Cumin, oregano, chili powder, salt and pepper.

How to use Carne Asada Marinade

Of course, this marinade is typically used for steak. The most common cuts used in Mexico are skirt steak and flank steak. That being said, this would make a great flavor enhancer for any of your favorite cuts. Simply place the meat in a ziploc bag, pour in the marinade and stick it in the fridge. I recommend marinating for at least 2 hours, but if you can, try 8 hours for even more flavor. This marinade also goes great with chicken or shrimp. Marinate the chicken for about 2 hours. For shrimp, only marinate for about 30 minutes, as the acidity can start to break down the delicate meat.

Can you store Carne Asada Marinade?

Absolutely! Refrigerate it in an airtight container or bottle and this is good to go for a week in your fridge! You can also freeze it in an airtight container. Use within three months for best quality. If you make a big batch, you can portion it out by freezing in an ice tray and storing the frozen cubes in a ziploc bag. When you are ready to marinate your meat, thaw 5-6 cubes per pound of meat. So, there you go my friends, another great homemade marinade to add tons of flavor to your meat.
